Sourdough Pumpkin Muffins with Brown Sugar Crumble

These sourdough pumpkin muffins are incredibly soft, perfectly spiced, and topped with a buttery brown sugar crumble that makes every bite irresistible. Muffins
½ cup melted butter
1 cup dark brown sugar
1½ cups pumpkin puree
2 large eggs
½ cup sourdough starter discard
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons pumpkin pie spice
Brown Sugar Crumble Topping
½ cup brown sugar
¼ cup all-purpose flour
4 tablespoons softened butter
1 teaspoon pumpkin pie spice
Instructions
Preheat your oven to 350°F and line a muffin pan with paper liners or lightly grease each cup.
In the bowl of a stand mixer (or a large mixing bowl), beat together the melted butter and brown sugar for about 5 minutes until light and fluffy.
Add the eggs, vanilla, pumpkin puree, and sourdough discard. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix.
In a small bowl, make the crumble topping by combining the brown sugar, flour, softened butter, and pumpkin pie spice. Mix with a fork or your fingertips until crumbly.
Divide the batter evenly among the muffin cups, filling each about ¾ full.
Sprinkle the crumble topping generously over each muffin.
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
