CINNAMON CRUMBLE MUFFINS

Ingredients
Muffins
1½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ cup granulated sugar
2 teaspoons ground cinnamon
2 eggs, room temperature
1 teaspoon vanilla extract

¾ cup whole milk
Cinnamon Crumble Topping
â…“ cup light brown sugar
â…“ cup granulated sugar
1½ cups all-purpose flour
2 teaspoons ground cinnamon
¼ teaspoon salt
½ cup melted butter
Vanilla Glaze
1 cup powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons heavy whipping cream (adjust for desired consistency)
Instructions
1. Prepare the Oven
Preheat your oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease the pan.
2. Make the Muffin Batter
In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
In a separate bowl, whisk together the eggs, vanilla, avocado oil, and milk.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
3. Make the Crumble
In another bowl, combine the brown sugar, granulated sugar, flour, cinnamon, and salt.
Pour the melted butter over the dry ingredients and mix with a fork until large crumbs form.
4. Assemble the Muffins
Fill each muffin liner about one-third full with batter.
Sprinkle a spoonful of crumble over the batter.
Add another layer of batter until each liner is about ¾ full.
Finish with a generous amount of the remaining crumble on top.
5. Bake
Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
6. Make the Vanilla Glaze
Whisk together the powdered sugar, vanilla, and heavy whipping cream until smooth. Add a little more cream if needed for a drizzle consistency.
Once the muffins have cooled slightly, drizzle the glaze generously over the cinnamon crumble topping.
